PRODUCTION

Super premium limited release. The 2020–2021 season in the Uco Valley delivered exceptional conditions for Cabernet Franc. A dry, temperate growing season with wide diurnal temperature shifts produced grapes of remarkable concentration and aromatic complexity. After careful hand-harvesting in late April, the fruit underwent a 21-day cold maceration and fermentation, followed by 18 months of aging in French Boutes oak barrels — a blend of first and second-use — to build depth without overpowering the varietal's signature elegance. This is our third single-varietal Cabernet Franc release, and we believe it is our finest yet.

TASTING NOTES

Deep garnet in the glass with violet reflections. The nose opens with layers of ripe blackcurrant, crushed violets, and fresh red bell pepper, followed by subtle notes of graphite, clove, and cedar from its oak maturation. On the palate, the wine is full-bodied and beautifully structured, with velvety tannins and a bright acidity that carries flavors of dark cherry, dried herbs, and a touch of smoky espresso through a long, persistent finish.

FOOD PAIRINGS

Pairs beautifully with grilled lamb chops, slow-braised beef short ribs, aged Manchego cheese, or mushroom risotto. Also excellent alongside roasted root vegetables or a classic Argentine asado.

We recommend decanting for 30–45 minutes and serving at 16–18°C (61–64°F).
